RULE NO.1
Keep It Sealed
We never use preservatives – which means if you don’t store your biltong right, mould can sneak in.
Why Vacuum Seal?
Vacuum sealing is the best way to keep your biltong fresh. By removing oxygen, we stop mould in its tracks. Not everyone has a vacuum sealer at home, so here’s what to do instead.
Got Leftovers?
We know it’s unlikely, but if you’ve got biltong you’re not eating straight away, leave it in the vacuum-sealed bag and pop it in the fridge.

Alternative to Vacuum Sealing: Paper Bags
If you don’t have a vacuum sealer, storing biltong in paper bags is your next-best option.
How Long Does It Last?

At room temperature, in a cool, dry spot, your biltong will stay fresh for up to 2-3 days humidity depending.

Pop it in the fridge, and you’ll extend that to around 7+ days, although it may begin to pick up a subtle “fridge taste”, which is still safe to consume if you’re not opposed to fridge taste.

For the best short-term results, keep your leftover biltong in a vacuum-sealed bag and store it in the fridge. This simple method can extend freshness for up to 12 months without losing flavour or texture.
Long-Term Tactic
It’s rare to have biltong last this long without being eaten, but if you need to store it beyond 12 months, pop it in the freezer. Properly vacuum sealed, it can last years. When you’re ready to enjoy, simply leave it at room temperature for about an hour - it will thaw perfectly, tasting just like the day you bought it.
